Day 1 | Day 2 | Day 3
Where We Stayed: Embassy Suites by Hilton Kansas City Overland Park
We stayed at Embassy Suites By Hilton Kansas City Overland Park. This was a fantastic hotel option because of the spacious rooms, tasty breakfast, and welcoming happy hour. We loved the location because it was less than 10 minutes to most of the places we visited. We also loved relaxing in the hot tub at the end of a busy day exploring!
What We Did: Day 1
Margarita Wars
When we first heard about Margarita Wars, we knew we had to visit! It was located in Thompson Park right in Downtown Overland Park. We had a perfect evening of trying margaritas, eating tacos, and listening to live music. There were also dancers and guacamole samplings. At the end of the night, we voted for our favorite margarita. Our vote went to K-Macho's Mexican Grill!
What We Did: Day 2
Our first stop of the day was at Parisi Coffee. We always love checking out new coffee shops when we travel and this one hit the spot! From the moment we walked in, we were struck by the bright, airy environment and beautiful marble countertops. Both the matcha and espresso were smooth and rich with flavor. We left feeling energized and ready to explore more of Overland Park.
Our next stop was the Overland Park Farmers' Market! This was such a lively experience that captured the heart of the community. It was packed with fresh produce, juice, breakfast tacos and burritos, flowers, and much more. Some of our favorite finds were:
- Juice from Zen Donkey Farms
- Coffee cake from Frannie Franks
- Breakfast burrito and taco from Taco Naco
This was the perfect spring activity and was a great way for us to support local businesses!
For lunch we stopped at KC Craft Ramen, which is a delicious Japanese restaurant. Right when we walked in, we loved browsing the Japanese snacks, drinks, and toys. The dining area was spacious and they had a covered patio. We ordered the tonkotsu ramen, karaage bowl, and pork gyozas which were all incredible. We loved their goal of providing customers “the true essence of Japan”. We highly recommend trying this place out!
We drove 30 minutes to Zip KC for the Sunset Date Night Zipline Tour and had an absolute blast! What we liked about this course was the combination of hiking and tower to tower ziplining. The adrenaline rush of soaring through the treetops on their zipline courses made for an unforgettable adventure. What made it even better were the guides who were welcoming and personable. It’s an experience that left us wanting more!
After ziplining, we worked up an appetite and stopped at Strang Hall. We loved the environment here. It’s a unique dining experience with many different food options served out of six separate kitchens. They also have a vibrant outdoor area with live music and cozy seats. We tried the tostadas, sushi, and banh mi sandwich. Everything was high-quality and so tasty!
Our final stop of the day was Vintage '78 Wine Bar. This was right down the street from Strang Hall and has over 100 wines available by the glass, half-glass, or taste. We loved all the options because it gave us a way to taste and compare a few wines. The ambiance was elegant and inviting which made it a great way to wrap up our adventure-filled day.
What We Did: Day 3
On our final morning we drove a couple minutes over to Corporate Woods Founders Park for a morning run. We were so excited to see everything so lush green. This park is connected to the Indian Creek Bike and Hike Trail and winds through corporate buildings. It made us wish our office space was right next to all these trails!
After our run we stopped at Red Kitchen KC. We had heard about the hype of their breakfast burritos and it lived up to the expectations! They were amazing and the watermelon agua fresca was a great addition. We also loved the atmosphere. They had a big garage door that opened to the patio, which let in the refreshing morning breeze.
RoKC
Our final stop of the trip was at RoKC in Olathe. They offered a diverse range of climbing options, including bouldering, top rope reaching 50 feet, auto belays, and lead climbing. They also have yoga classes, a weight room, sauna, and restaurant. We focused on top rope and bouldering and loved the route options. The environment was welcoming with a lot of natural light.
With the abundance of tasty food, coffee shops, outdoor adventures, and unique events, Overland Park is the perfect place to spend a weekend exploring. We’re already looking forward to our next visit!
