Atomic Cowboy

7101 W. 80th Street

Atomic Cowboy’s handmade biscuits and pizza has a new location in Downtown Overland Park. Time moves differently inside the Atomic Cowboy. That’s because the biscuits at Denver Biscuit Co rise when the sun does. And it only gets better from there. When the clock strikes Fat Sully’s o’clock, your hankerings don’t stand a chance thanks to gigantic slices, burgers and sandos. So stay a while, because when you’re at the Atomic Cowboy all your cravings are covered.

Denver Biscuit Co: In our house, everything is made in house. The biscuits, the gravy, the jam. Heck, even the pickles and local honey butter are homemade. Turns out, the more you make things from scratch, the more generous the portions get. Maybe it’s a Southern thing. Maybe it’s a Denver thing. Maybe it’s a biscuits-the-size-of-basketballs thing. But one thing’s for sure: you’re gonna wanna grab at least 4 napkins.

Fat Sullys: Giant slices of NY-style pizza. Double patty smash burgers and fried chicken sandwiches so decadent, they became the stuff of legend. Fries and sides that keep the party and the flavor going strong. It’s no surprise we like to go big here at Fat Sully’s. We invite you to grab some company, pull up a chair and get a taste. You might need both hands.

TikiTaco

7514 West 80th Street

The Overland Park location will be the third location in the KC Metro having a walk-up window and patio serving sweet chili shrimp tacos, jackfruit tacos, nachos, surf ‘n turf burritos and more, as well as a bar serving margaritas, pina coladas and other cocktails. The restaurant is known for what it calls “California flavors with touches of Polynesian and Thai mixed with Mexico.” Tiki Taco makes five different types of salsa and serves up burritos stuffed with ingredients that include French fries. Another perk is that the restaurant partnered with Yoli Tortilleria, which won a James Beard Award in 2023. QSR Magazine just named Tiki Taco to it’s “hottest start-up fast casuals” list. The shortlist includes 40 restaurants across the country. Tiki Taco is the only one that is headquartered in the Kansas City area.

Bloom Baking Co.

7500 College Blvd

Private chef Swetha Newcomb is opening a modern Asian restaurant in southern Overland Park this summer 2023. Of Course’s menu will feature New American cuisine with a “a lot of Asian fusion flair,” says Swetha. The chef’s fusion cuisine is evident in menu items like braised short rib samosas with blackberry tamarind chutney and Madras curry scallops. Hefty entrees like the umami ribeye for two and a wagyu smash burger are also offered for those looking for something more familiar. Other shareable plates teeter the line of adventurous and comforting, like savory donuts served with a house-made mushroom cream cheese.
